Lilleth’s Charcuterie Board

 

 

Ok, so does anything say “party” better than a charcuterie board?  I think not.

 

 

Salty, sweet, crunchy, chewy….the smell, the taste, the texture.  It is a meal, a snack, and a dessert in one place.  It’s perfection on a board!

 

 

Be creative with your boards.  I have three in these photos.  One is a large, round wooden board, one is a long, stone board and one is a beautiful glazed board in the shape of the state of Tennessee.

 

 

Charcuterie boards are an excellent way to express your creative side, entertain friends or family and satisfy pretty much every spot on the palate.

Description

This way of serving appetizers is so diverse.  You can make it vegan, vegetarian, pescatarian, herbivore or carnivorous.  I love the color and texture.  I actually ran out of board on this one and would loved to have added blueberries, raspberries and strawberries for more fruit and color.


Ingredients

Scale

1 package soft goat cheese to be baked in a small skillet or ramekin

3 pieces of crispy bacon or baked prosciutto to top baked goat cheese

1/4 onion, caramelized to top the goat cheese

1 handful of chopped scallions or chives to top the baked goat cheese

1 tablespoon EVOO to top the baked goat cheese

1 small honey pot

1 jar Trader Joe’s Pepper Jelly

1 ramekin of gherkins

1 ramekin of pitted, seasoned, mixed olives

1 ramekin of small mozzarella balls in seasoned olive oil

1 green apple, sliced

1 bunch of green, seedless grapes

1 bar of chocolate

1 brie

1 smoked gouda

1 Trader Joe’s Unexpected White Wisconsin Cheese

1 Gruyere cheese

1 Mancheco cheese

1 package of mixed cured meats including salami, prosciutto, coppa

1 hard salami, sliced and then halved

1 package salty crackers

1 package savory crackers such as Trader Joe’s Fig and Olive Crisps

1 handfull smoked, salted almonds

1 handful salted pistachios


Instructions

Pre-heat oven to 350 F.

 

Cook onions and bacon together until browned and crispy.

 

In a small skillet or ramekin add a pack of soft goat cheese and set in the oven to bake around 15 minutes until the cheese starts to bubble and browns slightly on the top.

 

Add the onions, bacon, and chives to the top of the baked goat cheese and drizzle with EVOO.  Allow to cool before adding to the board or place on a small trivet.

 

On the board, start by placing the cheese and ramekins one after another, leaving space in the middle for the goat cheese.

 

Be creative with the cheeses.  I sliced the Manchego thinly and then turned every other slice in the opposite direction for quirkiness.  Some are sliced, some cubed and some, like the brie, left in the pie slice shape with a knife for cutting.

 

Be creative with the meats as well.  You can slice, fold, roll and arrange in ribbons alternating with cheeses, fruits, ramekins and nuts.

 

Continue placing fruit, nuts, chocolate, meat and cheeses until it suits your own taste.
