Souvlaki Wraps with Tzatziki

So, Souvlaki wraps with Tzatziki was a new experience and a new recipe for me but I absolutely loved them.  I love all foods from a Mediterranean diet so this was a perfect Sunday lunch.  The Tzatziki added a nice, cool, herby flavor to the plate and was a great compliment to the veggies and chicken.

 

 

I fell in love with pita, hummus and Olive oil in Israel.  This would have been a great meal if we had stopped right here with some Israeli salad.

 

 

This wrap would work with almost any flat bread, Naan or Pita but we used an Indian flat bread that was soft and had a great flavor.  It was thick enough to stand up to the wrap without feeling heavy.

Who doesn’t love goat cheese….I started the wrap with a thin layer of goat cheese and then added sliced cucumber and avocado with a bit of Montreal Seasoning.

 

 

Next came the red onion and tomato.  It’s looking so fresh already.

 

 

Chicken tenders cooked in some Olive oil, a bit of Trader Joe’s onion salt and Montreal Seasoning.  If you haven’t tried TJs onion salt, you should.  I also added a bit of garlic salt, Sea salt and some confit garlic.

 

 

 

I skewered the wraps with long toothpicks garnished with tomatoes and olives.

Souvlaki Wraps with Tzatziki

Ingredients

Units Scale

2 pieces Indian flat bread

2 Persian cucumbers, cut lengthwise into 4 pieces

8 cherry tomatoes, halved

Soft goat cheese, creamed

Hummus

1/4 red onion, thinly sliced

1 avocado, sliced

4 chicken tenders, cooked and shredded

Olive Oil

Salt flakes

Montreal Seasoning

Trader Joe’s Onion Salt

Garlic Salt

For the Tzatziki: 

1 cup Greek yogurt

3 Tbsp cucumber, finely chopped

1/2 Tbsp red onion, thinly chopped

1 Tbsp fresh dill, finely chopped

1 Tbsp fresh mint, finely chopped

2 1/2 Tbsp freshly squeezed lemon juice

1 Tbsp Olive oil

Salt


Instructions

In a small bowl add all of the ingredients for the Tzatziki and mix well.

In a cast iron skillet, add a drizzle of oil heated to medium high heat.  Add the chicken tenders and a pinch of each of the dry seasoning.  Cook until done, shred and set aside.

To assemble warm the fat bread in a dry skillet.

Spread room temp Goat cheese on the warmed bread.

Add the sliced avocado, Persian cucumber, tomatoes, red onion and shredded chicken and drizzle with the Tzatziki sauce.  Roll into a wrap and wrap with parchment paper or skewer with veggies to help keep the shape.

Serve immediately and enjoy!
