
The Open-faced Everything Bagel of my Dreams
So……
Sunday is international cheat on your Noom diet brunch in case you didn’t know and I look forward to this meal ALL week. I dream about it, fantasize about it, plan for it and long for it. And here it is. The open-faced everything bagel of my dreams.
I really love so many things in this photograph starting with the base of the linen. I spent an hour in this store in San Gimignano with my friend trying to decide on which tablecloth to purchase and I could not be happier with my choice. The napkins are from the same store. The board was a gift from my best friend since childhood and belonged to her grandparents. Together we build Lilleth and Co and she gifted me this board last Christmas. It has been in almost every singe food shoot I have ever done. The silver also belonged to her husbands grandparents so lots of history in the props here.
The spices are in French escargot pots and are a favorite of mine. The magnifying glass was purchased in Salzburg, Austria which is one of my favorite cities in the world. The salt and salt grinder was also purchased there. The salt mines in Salzburg are famous and were used in WWII as hiding places for the Nazi’s stolen treasures of art.
The plate is from Gamble Pottery…..Naturally. It is family made from one of the loves of my life.
I really love sunny side up eggs as you know if you follow this blog. Their unctuous, buttery yolks add so much flavor to a dish and also soften the underlying everything bagel. For this breakfast we chose a lovely Pepper Jack cheese that was infused with caramelized onions and that was a very good decision. The cheese, mayo, bacon, avocado smash mixed with the everything bagel……You just have to try it to believe it. I made another one for Ken with an over easy egg which was good as well.

The Open-faced Everything Bagel of my Dreams
Ingredients
2 Everything bagels
2 eggs
8 pieces of bacon
1 Ripe Avocado
Kraft Mayo
Butter
Monreal Seasoning
Salt
Pepper
Instructions
Preheat oven to 450
Brown bacon and set aside reserving the grease for the eggs
Smash one ripe avocado and season with Montreal seasoning
Cut everything bagels in half (I use the tops of both for the most flavor and saved the bottoms)
Add Mayo to the tops of the bagels
Add shredded cheese
Add smash Avocado
Add bacon
Please in a hot oven
Add a slice of butter to the bacon grease and cook the eggs
Add the eggs to the hot bagel
